The Prep Edit

Boards first, then bowls, then composting. The wood fibre boards are the practical choice: knife-friendly like timber, dishwasher-safe unlike timber, and considerably lighter than a butcher's block.

Wood or plastic for hygiene? Wood, contrary to decades of received wisdom. Wood draws bacteria below the surface where they die off, while a scored plastic board harbours them in the grooves. Plastic boards also shed into your food as they wear.

Does a bench-top compost bin smell? Not if the charcoal filter is current. That is what the filter is for, and replacing it every few months is the whole maintenance routine.

Can I compost in a flat? Yes. A sealed bench bin collects scraps, then they go to a council green bin, a shared compost or a collection service. The bin is the easy part.
